Green but not Moldy





Happy St. Paddy's! I have forgone the green beer tradition for a much tamer celebration. We made green-pepper shamrocks and little Leprechauns, then prepared an all-green dinner. The green food was such a hit that I think I might try different all-color food nights. My only rule is no food coloring. The green dinner was green lettuce salad with peppers, cucumber, avocado and lime dressing. For the main dish we made spinach pasta with pesto sauce, asparagus, peas, and wilted spinach. Everything was not only tasty, but vegetarian friendly, because who wants to eat green meat??? Too bad Ash is not very interested in toileting right now because a green-filled diaper is a side effect of this feast I am not looking forward to!

I just read a book where the dad is obsessed with different colored dinners and on Blue Night he used plumb skins to dye the mashed potatoes and supposedly it gave them a fantastically springy taste. I don't even know if that's a real thing but I just thought I would pass it on! Your green dinner looks YUMO!
